How to Survive May

Readers, I don’t know about you, but May is such a double-edged sword for me.  As a speech pathologist in the schools, I am starting to count down the days till I’m summertime carefree.  The weather is warmer..finally!  However, along with the exciting summertime countdown,  there is hell to pay.  A son who plays baseball 4-5 days a week, a daughter with no less than 4 dance competitions and recitals, state testing, birthdays for everyone, spring concerts, and a million other commitments.  Have you seen the new Holderness Family video?  That’s us, except I wish I had the wife’s bod.

Fortunately I work part time and yesterday was my “off day”.  I got to catch my breath before the shit hit the fan at 3:30 and everyone had somewhere they had to be.  Tonight’s dinner was a genius.  A thing of beauty.  It satisfied everyone.  It was fast, reheated well, healthy, and I repeat, satisfied EVERYONE.  It’s not even a recipe.  It’s a “put together”.  I won’t even write out a recipe at the end cause it’s literally nothing!


I had the forethought to defrost about a pound and a half of boneless chicken breasts that morning.  I butterflied the 2 pieces and pounded them out to even thickness.  Pounding is good.  Good for the chicken and good for me as I was dealing with issues with my Moviepass account.  Whack!


Salt and pepper each side and I spritz some olive oil on both sides.  Tip-buy a good spritzer and fill with good olive oil for such a task.  Save calories with the little fat you need so your protein doesn’t stick the grill.  Don’t use those gross spray canisters of non-stick spray.  They ruin your pots and pans!


Throw your chicken on a hot grill and cook for about 3 minutes a side.  Now, read carefully, because this is the game changer that will make your mouth sing.  Orange Chipotle Marmalade.  This marmalade is the bomb.  Infused Spreads make it and I got it at my local farmers market this past Saturday.  The company is a local Baltimore company, but they ship all over.  Get this.  It will change you.  Do you see the big pieces of orange peel in this stuff?   I want to put this on everything!  Even better, it is all natural and has only 70 calories for 2 tablespoons and I was able to easily baste the 4 chicken breasts with that.  I follow Weight Watchers smart points and each piece of chicken was 1 SP.  Winner!




A scoop of rice, some sauteed spinach and dinner was done.  From whacking the chicken breasts to my belly….15 minutes.  Left the leftovers and dishes for my husband, Brian to do since he had the baseball responsibilities tonight and I was off to dance class. And that my friends, is how we handle May around here.

  2. Loved your blog post for today! It made me laugh & I love the tidbit about the olive oil with the sprayer. I wanna get some of that marmalade on Saturday.
