Chili Garlic Edamame

Seriously, guys. My life is a total mess right now. School has started and I’m overwhelmed, over-scheduled and tired. My son’s bar mitzvah is in less than a month and I still have so much to do, My ritual lately is I go to bed so tired around 9 and sit straight up in bed around 3am gasping, in panic mode. This too shall pass, and I’m just trying not to stress eat as I have a dress to fit into in a few short weeks.

I’ve been doing the Weight Watchers for the better part of my life now (haha) and the recent trend in the program is reduced sugar, lower saturated fats and lean proteins. I have turned to edamame as my snack of choice. It has tons of 18 grams of protein in a cup and just one gram of saturated fat. It’s a nutritional powerhouse. I have often enjoyed them steamed, right out of the bag with a big pinch of sea salt.

I was out for sushi with my daughter a few months ago and we ordered some edamame as an appetizer. They brought out edamame that were kicked up with garlic and chili. A little messier to eat, but what a flavor bomb!

I bought the idea home to jazz up my own edamame. A bag of frozen edamame. Some garlic, chili-garlic sauce, a teaspoon or so of sesame oil and you are good to go.

I cook up the edamame in the microwave according to the package directions. It’s usually about 4 minutes. While that’s going I heat a teaspoon of sesame oil in a skillet and add the garlic. Let the amazing smell hit you and add in the edamame.

Stir the edamame up and add a spoonful of the garlic chili sauce. How much you use is your choice. I like it spicy.

Toss it around and you have a guilt free snack. They are addictive!
