Dipping my toes in

So, here’s the thing.  I used to blog.  I wasn’t a crazy blogger and I wasn’t really committed to the whole thing.  But, I would write about new local places to eat, interesting things I have made and other tidbits.  I felt like it was a lot of work.  And commitment.  10 years ago, blogging was hard.  I wasn’t adept at all the technical aspects of blogging.  I still am not, but I am told blog sites have come a long way and it’s easier now.  So, we will see.

Since I’m only getting my toes wet with this first post, I’ll share an easy 5 ingredient recipe with you.  Mango Salsa.  I have been living off this stuff.  Spooning it on grilled chicken, sauteed fish and shamefully dipping more than my fair share of chips in it.  It’s sweet, spicy and fresh.

I have been getting my mangoes at Aldi as they have been super cheap.  We are talking 69 cents per mango.  Once I got the mangoes home I soon realized what a pain in the A they are to cut.  This fruit is not easy.  There is a huge, odd shaped pit-and if you try to cut around it you end up losing lots of the precious fruit.  Not to mention some fingers cause these things can be slippery!  I quickly did some research and bought myself a mango cutter.  I am the queen of kitchen gadgets and appliances.  If they make it, I generally have it.  And while I like to multi-task with many of my kitchen tools, a mango cutter is a solo gig.  Once I figured out how to use it with a YouTube video, I was slicing and dicing my way to this amazing salsa.

Tip:  Once you have your 2 halves, I found it easiest to score the top with a knife in a cross-hatch (like an avacado) and then flip the skin over and remove the chunks of fruit.

MANGO SALSA

  • 3 ripe mangoes, small dice
  • 1/2 red onion, small dice
  • 2 jalapeno peppers (ribs and seeds removed), finely diced
  • 3/4 cup of cilantro, well chopped
  • juice of one lime
  • salt to taste

Combine the mango, onion, peppers and cilantro.  Squeeze lime juice over the mixture and toss well.  Give a taste and add salt to your liking.  Keep it healthy and serve over grilled chicken or fish or rip open a bag of tortilla chips.  I won’t judge.
